A Green Recipe for Spring (and St. Patrick’s Day!)
Spring is upon us! In Chinese medicine, springtime is associated with the color green, growth, the eyes, and the Liver organ system. Spring is a good time to start doing more exercise to help get your liver qi moving and to help with stress. It’s also a good time to start eating more green vegetables and sprouts. The vinegar and mint in the following recipe cool and benefit the liver, helping to detoxify and get your blood moving. Enjoy, and Happy Spring!
2 tablespoons olive oil
¾ lb asparagus, cut into 2 inch pieces
¾ lb snow peas (or mangetout)
Bunch of spring onions, chopped
1 tablespoon raspberry vinegar
2 tablespoons chopped mint
2 tablespoons finely chopped chives
Mint sprigs for garnish
Heat a wok, then add the olive oil and stir fry the asparagus and mangetout for 2 minutes. Add the spring onions. Remove the wok from the heat, add the raspberry vinegar, chopped mint, and chives and toss to mix. Garnish with the sprigs of mint.
Serve with crusty French bread or rice.
